Kuniharu Kobayashi has perfected his soba-noodle making techniques during his 36 years of experience running Minamoto Soba. Kuniharu in turn learned these techniques from his father, Takaji Kobayashi, who ran our restaurant for 50 years previously.

This slideshow shows our secrets, an accumilation of two generations of experience in developing the perfect technique for making fresh soba noodles.
