Here at Minamoto, we make 2 types of noodles.
Both are freshly made every day by hand.
"Juu-wari" noodles are made from premium 100% Japanese buckwheat grains, which are ground in-house. Juu-wari noodles are slightly more expensive, though we recommend these noodles for their fuller flavour.
"Ni-hachi" style noodles are made using a blended buckwheat grain powder and include seaweed in the noodle dough.

One secret behind the distinctive local taste of our dishes is the natural mineral water used to make soba dough, sourced from the nearby "Uchiyama no meisui" spring. See our page on how to make soba noodles for more details!
But there is more to Minamoto than just soba noodles - we also serve dishes such as "Ten-don" (tempura on dish of rice), sashimi (fresh raw fish), mountain vegetable and salad-based dishes. We also stock a range of local sake served with hand-made snacks.
We would also be happy to send our fresh noodle dishes direct to your door, via a refrigerated courier service. Our noodles should be consumed at most 2 days after arrival - though ideally on the same day.
